Say hello to Iron Bay manager and chef, Andrew Hillary. After spending six years in the navy, he wanted to switch things up and landed on baking. Eventually his love of baking got him running a restaurant in Marquette which we know and love. With a love for creating new vegan and gluten free dishes for Iron Bay, Andrew has some interesting things to say on how his cooking came to be.

Grilled Octopus

It's special to find fresh seafood in the UP. We have an abundance of fish, but not a lot of shellfish and mollusks. I wasn't expecting the octopus to be as fresh tasting as it was, but it was a very pleasant surprise. The tender, grilled meat was placed nicely with a punchy vinegar cucumber/celery salad, which gives it nice variety. Although, the octopus is delicious on its own as well.

Mango + Honey Cake

Gorgeous cake with a super moist base. if you have a big sweet tooth this is the cake for you. The standout star is truly the moist base - some of the best I've had. The frosting can be a bit sweet though, so if you prefer your desserts on the lighter side, I'd skip this one.

Zephyr Winebar

Tiramisu

If you make the trip to Zephyr, make sure to get this tiramisu! The flavors perfectly balance each other; the coffee doesn't overpower the taste of the creamy layers. The hint of cinnamon on top is a small but noteworthy addition to this layered delight. Don't worry, its a nice spongy cake that doesn't fall into the typically soggy tiramisu trap.
